Additionally, the ceaseless wildflower blossoms from the Agate desert, thriving around the area’s distinctive vernal pools, add their unique notes to this annual sweet symphony.

Contributing to this seasonal honey are the early-blooming trees native to the region, namely the Madrone and Black Locust, their rich nectars augmenting the honey’s complexity. Some years, these nectars are plentifully collected by industrious bees, while in others, spring rains might sweep the blossoms away, making this honey truly a product of the year’s weather patterns.

Our Beekeeping Colleagues

We are thrilled to associate with local beekeepers who practice ethical and caring methods for honey collection.

Here is how they describe the process:

As a smaller commercial bee operation, we follow a strict set of guidelines with regards to how we handle our honey. For starters, we pull the honey from our hives by hand, using escape boards overnight, gently allowing bees to return to the Queen and Babies below.

Once honey is placed in our processing room, it is extracted that day by the beekeeper utilizing no heat and no filtration systems common in commercial operations. The honey is allowed to settle overnight.

From here, the honey is either bottled or sealed thus limiting degradation of honey constituents which include enzyme activity, vitamins and antioxidants present in this precious whole food.

We offer 5-ounce and 16-ounce jars of honey. The wide mouths of these jars make spooning out honey by the teaspoonful easy!
